Here is the first in a several part series, known as “Week Night Meal Solutions”. Whether your household is one with little ones, kids in activities, or never totally satiated teens, a quick, healthy dinner recipe is always welcome. Have one you would recommend? Send it my way and you could be featured in a future post! Till then? Here is one of my family’s favourites. Yes, I know tacos are nothing new to many. If you’re accustom to store bought seasoning, hopefully this becomes your new go-to!
Yields enough for a few separate uses
2 tbsp chilli powder
2 tsp cumin
1 tsp paprika
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp crushed chilli flakes (more if you like it spicy)
1 lb (464 g) extra lean ground beef, pork or the meat of your choice. We love using the meat from Spud.ca for $6.99 they offer the best organic ground beef or pork my family has ever had.
1/2 cup all natural tomato sauce
2 tbsp taco seasoning
1 tsp hot sauce
salt and pepper to taste
2 bell peppers, roughly chopped
1/2 yellow onion, roughly chopped
Extra virgin olive oil in a spray bottle
All natural corn tortillas
Condiments of your choice: guacamole, salsa, and sour cream
Brown meat in a sauce pan on medium heat. Once meat is cooked to medium well drain excess fat in a colander. Reduce heat to medium-low. Return meat to pan while adding tomato sauce, taco seasoning, salt, pepper, and hot sauce (before adding the last three ingredient, I remove enough meat for my kids). Mix well. Once cooked through, reduce heat to low. In a separate pan, spray olive oil, lightly season vegetables, and sauté until cooked to desired doneness.
Assemble tacos and enjoy!
