Week Night Meal Solutions: Chicken Lettuce Wraps

On a hot summer’s night in a busy household, full of flavour, and require the oven on or the stove top for long is great! This recipe is healthy, filled with veggies, low in fat, and makes for a great light dinner or a nice appy when you have guests.

    Serves 4 for dinner, 6 + for an appetizer

Ingredients

  • 3 skinless, boneless chicken breasts, cut into bite sized pieces
  • 1/2 tbs ginger, finely grated
  • 3 cloves garlic, diced
  • 1-1.5 tbs Sriracha
  • 1 tbs soy sauce
  • 1 tbs fish sauce
  • 1/2-1 tbs raw sugar
  • Splash of rice wine vinegar
  • 1/2 tbs sesame oil, or the oil of your choice
  • Juice of a 1/4 lime, or more to taste
  • 1/3 cup unsalted, raw peanuts, roughly crushed
  • salt and pepper, to taste
  • 4 stalks celery, roughly chopped
  • 1 1/2 large bell peppers, roughly chopped
  • 2 carrots, peeled, sliced
  • 2 stalks green onion, roughly chopped
    • 1/2 head of iceberg lettuce, pulled apart, and washed

      Directions

    In a large container, combine first twelve ingredients and set aside. Set a large sauté pan or wok on medium high heat. Prep veg. Once pan is heated, stir fry contents until chicken is lightly browned. Mix in vegetables (excluding lettuce until peanuts are golden and chicken is cooked through.
    To make a meal, serve with a side of brown rice, whole wheat couscous or quinoa.
